Our food is rooted in tradition, but influenced by our chefs’ diverse experiences as Londoners. We try as much as possible to source our ingredients locally, seasonally, and sustainably – not because it’s fashionable, but because it’s true to the origins of our recipes. Traditional cooking is all about conservation: using what’s available, making it stretch, and wasting nothing. Of course, what’s local and seasonal here isn’t quite the same as in Sri Lanka or Brazil – so you’ll see our chefs reinventing traditional dishes with homegrown British produce. From fiery pumpkin curry to ethereal carrot soufflé, it’s food you won’t find anywhere else.
